We hand-cut prime strips from each troll caught white king salmon, and carefully hand trim, leaving a very moist succulent strip of prime king salmon. This portion is then soaked in a light brine solution. During the next step, we carefully season each strip by hand and then apply our local Fireweed Honey to each strip during the slow smoking process.
These Honey Smoked Strips are smoked to perfection using selected hardwoods from our local Alder forests. It’s a timely and costly process, but the results speak for themselves
